Red Cabbage
- 1 large red cabbage
- 1 medium yellow onion
- 1-2 bay leafs
- 1.5 cups of cider vinegar
- 3/4 cups of sugar
- 1/2 tsp salt
- 30 whole cloves
- 2 tbs bacon fat or vegetable oil
- cut the red cabbage into 4 quarters and remove the core. Then slice into thin strips.
- Mix the cider vinegar, sugar and salt together in a bowl until all the sugar has disolved.
- Stud the onion with the cloves. You should make at least two complete rings around the onion with the cloves. Use more or less if needed.
- Add the bacon fat or oil to a large pot under medium heat. When the fat is hot, add the cabbage and toss.
- Cover the pot and toss every 5 minutes until the cabbage has wilted.
- add the onion, bayleaf, and vinegar mixture. Reduce heat to low and cover.
- Left cook for 60 minutes tossing occasionally.
- Remove onion and bayleaf when serving.
