Green Pasta Salad
- 12 oz Brown Pice Penne
- 1/4 Cup Extra Virgin Olive Oil
- 1/2 cup Fresh Flat Leaf Parsley
- 1/2 cup Fresh Basil Leaves
- 2 large garlic cloves, crushed
- 1/2 cup plain yogurt
- 1/2 cup mayonnaise
- 1 Tablespoon Fresh Squeezed Lemon Juice
- 3 Scallions, Sliced, including 3 inches of the green top
- Salt & Fresh Ground Pepper
- 3 eggs, hard-boiled and diced
- 1 Tablespoon Fresh Chives, Diced
- Cook pasta in large pot of boiling salted water until tender but still firm to bite. Drain. Cool. Place cooled pasta in large bowl.
- Put Oil, Parsley, Basil, and Garlic in food processor. Cover and blend into a paste. Add yogurt, mayonnaise, lemon juice, scallions, and salt & pepper. Cover and blend to a pale green creamy dressing.
- Add green dressing to cooled pasta and toss gently. Adjust salt & pepper if necessary. Cover and refrigerate for several hours. Serve garnished with eggs and sprinkle with chives.
