Greg'S Banana Bread

  1. Set oven to 170 celsius. Butter and flour a baking tin.
  2. Put sultanas in the rum - and either zap in the microwave until boiling, or bring to boil in a small pan. Then leave them for at least an hour.
  3. Mix all the dry ingredients in a bowl.
  4. Mix melted butter, sugar, eggs, vanilla and rum. Mash bananas roughly - then mix those in too. Add the sultanas and rum.
  5. Mix wet ingredients into dry ingredients - but don't mix too well.
  6. Put in the baking tin. Sprinkle with a bit more brown sugar (demerera or 'cassonade' in French - is best).
  7. Bake for 1 - 1 1/4 hours. Test with a skewer at 1 hour and if it comes out cleanly, it's done.
