Greg'S Banana Bread
- 100g sultanas
- 75ml dark rum
- 175g plain flour
- 2tsp baking powder
- 1/2 tsp bicarbonate of soda
- 1/2 tsp salt
- 125g melted butter
- 150g light brown sugar
- 2 large eggs
- 3 large or 4 small very ripe bananas
- 60g walnuts (optional)
- 1tsp vanilla extract
- 2 inches of cinnamon stick - ground up
- 2 cloves - ground up
- 1/2 a nutmeg - ground up
- Set oven to 170 celsius. Butter and flour a baking tin.
- Put sultanas in the rum - and either zap in the microwave until boiling, or bring to boil in a small pan. Then leave them for at least an hour.
- Mix all the dry ingredients in a bowl.
- Mix melted butter, sugar, eggs, vanilla and rum. Mash bananas roughly - then mix those in too. Add the sultanas and rum.
- Mix wet ingredients into dry ingredients - but don't mix too well.
- Put in the baking tin. Sprinkle with a bit more brown sugar (demerera or 'cassonade' in French - is best).
- Bake for 1 - 1 1/4 hours. Test with a skewer at 1 hour and if it comes out cleanly, it's done.
