Margie'S Onion Soup
- 8 - onions
- 4 - cans consomme
- 2 - cups water
- 6 - slices bacon
- 3 - Tablespoons flour
- 1 - teaspoon thyme
- 1 - teaspoon basil
- 2 - whole bay leaves
- Loaf of french bread
- Butter
- Mozzarella or swiss cheese slices
- Grated Parmesan cheese
- 1. Chop onions.
- 2. In large pan fry bacon until crisp. Remove.
- 3. Saute onions in bacon grease over low heat until transparent.
- 4. Stir in flour and continue to cook for 1 minute.
- 5. Add consomme & water and stir until well mixed.
- 6. Add pepper to taste.
- 7. Add all remaining spices and simmer a minimum 30 minutes - while simmering prepare bread.
- 1. Slice the french bread.
- 2. Toast bread on one side
- 3. On untoasted side, spread butter and place a slice of cheese.
- 4. Put a piece of bacon on top of cheese slice and sprinkle with parmesan cheese.
- 5. Put under broiler until cheese melts.
- Put the bread in a bowl and pour soup over.
