Fiery Chocolate Cookies
- 2 sticks softened unsalted butter at room tempurature
- 1 cup sugar
- 1 cup brown sugar
- 2 large room tempurature eggs
- 2 teaspoons vanilla extract
- 1 tablespoon plus 1 teaspoon ground cinnamon
- 2/3 cup unsweetened cocoa powder
- 1 teaspoon salt
- 2 cups unbleached flour
- 1 teaspoon baking powder
- 1 tablespoon ground cayenne pepper (or to taste)
- Preheat oven to 350 degrees. Line two cookies sheets with parchment paper.
- In the bowl of a standing mixer with the paddle attachment cream the butter and sugars until smooth. Add the eggs one at a time until blended in. Add vanilla and cinnamon. Slowly add cocoa powder and mix on low until well-blended. Be sure to scrape down the sides of the bowl to ensure even mixing.
- In separate bowl whisk together flour, salt, baking soda, and cayenne pepper.
- Gradually add flour mixture to butter/sugar/cocoa mixture and mix on low just until all flour is incorporated.
- Using a table spoon or 1 1/2" ice cream scoop spoon dough onto prepared cookie sheet spaced 1 1/2" apart.
- Bake for 9 - 11 minutes until cookies are puffed and edges are dry. Cookies may appear undercooked, but will set nicely when cooled. Allow to cool one minute on sheet and transfer to cooling rack to cool completely. Enjoy!
