Vanilice
- For dough:
- 500 gr of margarine
- 2 cups of sugar
- 2 whole eggs
- 2 egg yolks
- vanila sugar
- zest of one lemon
- juice of one lemon
- 250 gr of ground walnuts
- about 700 gr all-purpose flour
- 1 cup of apricot or plum jam
- 2 egg whites
- 250 gr of ground walnuts
- 300 gr of icing sugar
- 500 gr of margarine softened on room temperature cream until light.Add sugar and beat until light and fluffy.Add whole eggs,egg yolks,vanila sugar,lemon zest,lemon juice and 250 gr of ground walnuts.Start adding flour.How much flour you will add depends on felleng youll have under youre hands.If dough is soft enough but not to sticky you can stop adding flour.Roll out dough on lightly floured surface on 1/8 inch thickness and cut cookies with small glass.
- Beat 2 egg whites and dip cookies in egg whites and then in other 250 gr of ground walnuts but only from one side.Place cookies with undiped side on backing paper.
- Preheat oven on 200 C and bake cookies on 200 C about 10 minutes not longer cause you can overbaked them. Put two cookies together with jam between them to make one "vanilica". Roll
- "vanilice" in lots of icing sugar.
