Garlic Vegetarian Pizza

  1. Preheat oven to 425 degrees F. Drain beans and reserve juice.
  2. In a blender add black beans, garlic and cilantro, blending until smoothe, adding bean juice as needed for a thick sauce.
  3. Spoon Black Bean sauce on top of four 10" pitas, spreading to edges.
  4. Spread 1 C shredded cheeses on top of each pita and add sliced vegetables.
  5. Place pitas on cookie sheet and bake on middle rack of oven for 8-10 mins. or until cheese melts and bubbles.
  6. Remove pizza from oven, slice and serve.
