Pan Fried Chicken
- Two 3- 4 lb chicken cut up.
- 1 1/2 c flour
- 1 tsp pepper
- 1 tsp chicken coup baase
- 1 tsp paprika
- 1/4-1/2 tsp cayenne
- 2 tsp seasoned salt
- 2 cups crushed corn flakes
- Flour chicken with above mixture.
- Dip in an egg was of 1 egg beaten 2-3 TBSP milk/cream
- Douse again in flour mixture. Can repeat if you desire. Let dry somewhat on a rack to allow dripping of excess.
- Using a large fry and and cooking in batches heat 1/2 C of oil and 1/4 C butter and cook 1/3 to 1/2 pieces at a time 5 - 6 minutes on each side until brown and cooked through.
- May continue to cook in a preheated oven until all pieces are done.
- Enjoy.
- Serve with creamy potato salad and nice tossed salad.
