Grandma Jeanne'S Banana Cake
- Measure and Sift
- 3 cups of cake flour
- 1/2 tsp baking powder
- 1 1/2 tsp baking soda
- 3/4 tsp salt
- 2 1/4 cups sugar
- Measure into mixer
- 3/4 cup shortening or oleo
- Measure into bowl
- 1 1/8 cup sour milk
- 1 1/2 tsp vanilla
- 2 whole eggs and 1 yolk
- 1 1/2 cups mashed ripe banana
- To make sour milk add 1 tbsp of vinegar to milk
- Mix shortening just enough to soften
- Sift in dry ingredients
- add 3/4 cup sour milk and beat at #2 speed for 2 minutes
- Add Eggs, vanilla and remainder of milk and beat 1 minute longer at #2 speed
- Add mashed banana and beat 1 minute more
- Bake in greased loaf pan 375 F for 35 minutes or until toothpick comes out clean
