Reuben Meat Loaf
- 1 egg, beaten
- 1 c. rye bread crumbs
- 1/2 c. onion, chopped
- 1/4 c. sweet pickle relish
- 1/4 c. Russian salad dressing
- 1 Tbsp. Worcestershire sauce
- 1 1/2 lb. ground pork or beef
- 12 oz. sauerkraut, drained
- 1 1/2 c. Swiss cheese, shredded
- 1 tsp. salt
- 1/4 tsp. coarse ground pepper
- In bowl, combine egg, bread crumbs, onion, relish, salad dressing, Worcestershire sauce, salt and pepper.
- Blend.
- Add ground meat and mix well.
- Pat meat mixture into 8 x 12-inch rectangle on wax paper.
- Top with sauerkraut and cheese.
- Beginning at short end, roll by lifting end of wax paper.
- Press ends to seal.
- Place seam side down on a 9 x 13-inch baking pan.
- Bake 50 minutes in 350u0b0 oven.
- Remove from oven and sprinkle top with cheese.
- Turn off oven.
- Return to oven to melt cheese.
- Serves 4 to 6.
