Beef Stroganoff
- 1 lb beef round, sirloin or london broil
- 2 T butter
- 12 oz mushrooms, sliced
- 1 medium onion, minced
- 2 C beef broth (bouillon)
- 2 T catsup
- 1 T Worsteshire sauce
- 2 small garlic cloves, minced
- 1 tsp salt
- 3 T flour
- 16 oz sour cream
- Egg noodles, cooked
- 1. Cut meat into bite-sized cubes. Brown in butter in large skillet or dutch oven. Reserving 1/3 C of broth, stir in remaining broth, catsup, Worsteshire, garlic and salt. Cover and simmer AT LEAST one hour.
- 2. Blend reserved broth and flour. Add onions to simmering mixture; let cook til onions are tender (uncovered), add mushrooms and cook 5 mins more. Add flour & broth mixture; bring to boil & boil one minute. Let excess liquid cook off; add sour cream and heat through.
