Cowboy Ciao Stetson Chopped Salad
- 1t. cooked Israelli couscous
- 1/2t. diced Roma tomatoes
- 1/2t. dried sweet corn
- 1t. chopped arugula
- 2tz. smoked salmon, diced (could substitute chicken if you don't like smoked salmon)
- 1/2t. Asiago cheese
- 1/4t. dried currants
- 1/4t. toasted pepitas (pumpkin seeds)
- Dressing:
- 1/4t. basil pesto
- 1/2t. mayo
- 1thallot
- 1/2t. buttermilk
- juice of one lemon
- salt & pepper to taste
- Arrange ingredients in separate rows on a large platter. Toss salad at the table, with the dressing.
- To make the dressing, place all ingredients in a blender and blend. Will keep in fridge for up to a week.
