Chicken Yakitori
- 1 1/2 lb boneless, skinless chicken breasts cut in to 1" pieces
- 10 scallions, cut into 1" pieces
- 1 lg red bell pepper, cut into 1" squares
- 1/3 c low-sodium soy sauce
- 3 tbsp mirin or rice wine (or 1/3 c dry white wine w/2 tsp sugar
- 2 tsp dark sesame oil
- 2 tbsp grated fresh ginger
- 2 minced garlic cloves

- 8 8" skewers (if wooden soak in water for 30 min
- Heat oven to broil.
- Thread chicken, scallions and pepper onto skewers; Place in a lg shallow dish. Whisk together soy sauce, mirin, oil, ginger and garlic. Cover skewers w/ 1/2 c of the mixture and marinate at room temperaturefor 10 min;p set aside remaining soy sauce mixture for dressing cooked skewers.
- Lightly coat a broiler pan with cooking spray. Place skewers on thepan,reserving marinade. Broil, turning skewers and basting occasionally with reserved marinade, until chicken is no longer pink, about 10 min.
- Serve hot with reserved soy sauce mixture. Over NUTTY BROWN RICE
