Fusion Pasta Salad Japanese And Thai
- 2 Tablespoons Chilli Paste
- 5 Basil Leaves
- 2 Slices of Smoked Salmon
- 1 Sheet of Seaweed
- 1 Whole Egg*
- 100g Pasta Flour*
- 2 Pinch of Salt
- Pinch of Sesame
- 10 pieces of salad mix lettuce
- Basic Seasoning (Salt and Pepper)
- *You can buy pasta if you do not have time to make pasta from scratch so you would not need these ingredients
- (Pasta from Scratch)
- Make the pasta: Tagliatelle* - 30 min
- a.ttart with a clean working station
- b.take a mound of the 100g flour and a pinch of salt with well in the middle
- c.tdd 1 whole egg to the well
- d.ttir mixture until the dough comes together
- e.trap in plastic for 20 min (Skip to prepare the topping step then come back to this step when done with preparing the topping, or if using an instant pasta start to cook the pasta.)
- f.tnead the dough until it is soft. 5min
- g.tun the dough through the widest setting on the machine until it is thin
- h.tut dough into half
- i.tun the dough through the Tagliatelle setting on the machine, have a plate filled with flour ready for the pasta to rest on
- j.tut pasta in flour so the pasta would not stick together
- Cook the pasta - 5 minutes
- a.till a large stockpot with water (the pot must be 3/4 full)
- b.tdd 1 pinch of salt per gallon of water
- c.teat the water into a rolling boil - a boil which can't be stopped by stirring
- d.tdd the pasta into the stockpot
- e.ttir occasionally for 4 to 5 min
- g.train the pasta in a colander to get rid of extra water
- h.tinse with cold water
- i.tet pasta on serving plate
- Topping
- a.tlice 2 slices of salmon sashimi into bite pieces
- b.tut 1 sheet seaweed into small strips
- c.thred 5 basil leaves into small pieces
- d.tut 10 pieces of salad mix lettuce into small pieces
- e.tdd all ingredients into small separate bowls ready for tossing the pasta salad
- Toss pasta salad
- a.tut Salmon and Chilli paste in the bowl
- b.tix until ingredients are combined
- c.tdd Tagliatelle, basil leaves, and Seaweed (you can add salad mix lettuce now if you want it to be soft)
- d.tix and toss with a spatula until ingredients are combined thoroughly.
- Present on Plate - 5 minutes
- a.tet pasta on plate
- b.teason with Salt and Pepper till desired flavour
- d.tarnish with Basil leaves, sesame seeds and Seaweed strips
