Teddi'S Apple Cake
- 3 cups flour (I use unbleached)
- 2 cups sugar
- 3 tsp baking pwdr
- 1 cup cooking oil
- 1/3 cup OJ
- 1 tsp vanilla
- 3 eggs, beaten
- 2 cups finely chopped apples (I use some granny smith, some red and take off the skin)
- 1 heaping tsp cinnamon + 1/3 cup sugar (keep this separate)
- Preheat oven to 350 degrees.
- Mix flour, sugar & baking powder together. Combine oil, OJ, vanilla & beaten eggs together. Add to dry mixture and beat til smooth (not long)
- Grease & flour a tube pan. Pour in half of batter, then sprinkle 1/2 of the apples and 1/2 of the cinnamon sugar over them. Repeat with the rest of batter, apples/sugar/cinnamon on top. Bake about an hour + 10 or 15 minutes. Test with long toothpick.
- Let stand and then flip out of pan and re-flip again so apples are on top!
