Scalloped Potatoes And Ham
- 3 Tbsp. oleo or butter
- 3 Tbsp. flour
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 2 1/2 c. milk
- 6 c. (6) thinly sliced potatoes
- 1 small onion (1/4 c.), chopped
- 1 1/2 c. fully cooked ham
- 1 Tbsp. oleo or butter
- Heat oven to 350u0b0.
- Grease 2-quart casserole.
- Heat butter or oleo in 1 1/2-quart saucepan over low heat until melted.
- Stir in flour, salt and pepper.
- Cook over low heat, stirring constantly, until smooth and bubbly; remove from heat.
- Stir in milk.
- Heat to boiling, stirring constantly.
- Boil and stir 1 minute.
- Layer 1/3 of the potatoes, 1/2 of the onion and ham and 1/3 of the white sauce in casserole; repeat.
- Top with remaining potatoes and white sauce.
- Dot with 1 tablespoon oleo or butter.
- Cover and bake 30 minutes.
- Uncover and bake 60 to 70 minutes or until potatoes are tender.
- Yields 6 servings.
