Red Pepper Stuffed With Eggs

  1. 1. Preheat oven to 425u0b0F.
  2. 2. Slice off the top of each red bell pepper.
  3. 3. Place the peppers on a cookie sheet or glass baking dish.
  4. 4. Break an egg into each pepper.
  5. 5. Mix tomatoes, olives, garlic and basil. Season with the salt and pepper.
  6. 6. Add vegetable mix to the egg in the pepper and mix gently with a fork.
  7. 7. Bake 15 min.
  8. 8. Top the peppers with the cheese and bake until the cheese is bubbly and egg is set (10-12 more minutes).
  9. 7. Let cool for 5 minutes and serve.
