Red Pepper Stuffed With Eggs
- 2 large red bell peppers
- 2 large eggs
- 1-2 garlic cloves grated
- 1 firm tomato chopped
- 1/4 cup sliced black olives
- 1/2 cup mozzarella/cheddar cheese
- 1/4 cup feta cheese
- 1 Tbsp chopped basil
- Salt and freshly ground black pepper to taste
- 1. Preheat oven to 425u0b0F.
- 2. Slice off the top of each red bell pepper.
- 3. Place the peppers on a cookie sheet or glass baking dish.
- 4. Break an egg into each pepper.
- 5. Mix tomatoes, olives, garlic and basil. Season with the salt and pepper.
- 6. Add vegetable mix to the egg in the pepper and mix gently with a fork.
- 7. Bake 15 min.
- 8. Top the peppers with the cheese and bake until the cheese is bubbly and egg is set (10-12 more minutes).
- 7. Let cool for 5 minutes and serve.
