Chinese Noodle Salad
- Four packages ramen noodles, any flavor (preferably chicken), cooked, drained and cooled. (Don't add the seasoning packets; they go in the sauce - see below).
- 1 bag shredded red cabbage or cole slaw
- 1 bunch scallions (diced)
- 1 cup cashews or peanuts (you can use more if you want)
- Sauce:
- 1 cup vegetable oil (I use a little less)
- 4 teaspoons sugar
- 1 tablespoon red wine vinegar or balsamic vinegar
- 4 seasoning packages (from noodles)
- 1/2 teaspoon pepper
- few drops sesame oil (optional)
- Just before serving add 1 can of chow mein dry noodles and mix
- Make the sauce and shake up in a jar
- Cut up cabbage and scallions.
- Dump everything in a bowl and mix together just before serving.
