Mom'S Red Velvet Cake
- Cake:
- 1 cup oil
- 2 cups sugar
- 2 eggs
- 3 Tbsp cocoa
- 2 oz. Red food coloring
- 1 tsp vanilla
- 2 cups self-rising flour
- (
- 2 1/4 cups all-purpose flour, 2 tsp baking soda, and 2 tsp salt)
- 1 cup buttermilk
- Frosting: (You may want to double this)
- 1 stick margarine
- 8 oz. Cream cheese
- 1 box confectioners sugar (3 3/4 cups)
- Cake:
- Mix all ingredients together until mixture is smooth. Pour into 9" round cake pans and bake at 350 for approx. 30-35 minutes.
- Frosting:
- Mix margarine and softened cream cheese until smooth. Add conf. Sugar and mix well. You may have to add a little milk to make it the consistency to spread. Spread on cake when cool.
