Roasted Beets With Indian Spices
- 1 3/4 lb beets---mix of colors
- 2 T olive oil
- 1/2 tsp kosher salt
- pepper
- 1/2 tsp black mustard seed
- 1/2 tsp coriander seed
- 1/2 tsp cumin seed
- 1 garlic clove, chopped
- 1/3 c Greek yogurt
- 1/2 jalapeno pepper seeded and chopped
- 1 tsp grated fresh ginger
- 1 tsp lime juice or more
- 2 Tbsp cilantro chopped
- Heat oven to 375.
- Peel beets and cut into 1 inch chunks.
- Toss with oil and season with 1/4 tsp salt and pepper.
- Roast 30 mins tossing ocassionally.
- Sprinkle with mustard, corinader and cumin and roast until tender about 15 mins more.
- Prepare dressing while roasting:
- use mortar and pestle to mash garlic with pinch of salt to a paste. Place yogurt in bowl and whisk in garlicpaste, jalapeno,ginger, 1/4 tsp salt and lime juice and cilantro.
- Stir beets and dressing together.
