Roasted Beets With Indian Spices

  1. Heat oven to 375.
  2. Peel beets and cut into 1 inch chunks.
  3. Toss with oil and season with 1/4 tsp salt and pepper.
  4. Roast 30 mins tossing ocassionally.
  5. Sprinkle with mustard, corinader and cumin and roast until tender about 15 mins more.
  6. Prepare dressing while roasting:
  7. use mortar and pestle to mash garlic with pinch of salt to a paste. Place yogurt in bowl and whisk in garlicpaste, jalapeno,ginger, 1/4 tsp salt and lime juice and cilantro.
  8. Stir beets and dressing together.
