Minestrone(Italian Soup)
- 6 c. water
- 1 1/4 c. (about 1/2 lb.) navy beans
- 1/4 lb. salt pork
- 3 Tbsp. olive oil
- 1 small onion, chopped
- 1 clove garlic, chopped
- 2 stalks celery
- 2 small carrots, scraped
- 1 medium potato
- 1/4 head cabbage
- 1 Tbsp. chopped parsley
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 1 qt. hot water
- 1/4 c. precooked rice
- 1/2 c. frozen peas
- 1/4 c. tomato paste
- grated Parmesan cheese
- Heat 6 cups of water to boiling in a large saucepan. Gradually add navy beans to boiling water.
- Simmer 2 minutes and remove from heat.
- Set aside to soak, about 1 hour.
- Add salt pork to beans.
- Return to heat and simmer one hour.
