Bbq Beef Brisket With Coffee Cure
- For the rub:
- 1/4 cup finely ground dark roast coffee
- 1/4 cup dark chili powder
- 1/4 cup smoked paprika
- 1/4 cup kosher salt
- 1/3 cup packed dark brown sugar
- 1.5 tablespoons sugar
- 1 tablespoon garlic powder
- 1/2 tablespoon ground cumin
- 1/2 teaspoon cayenne pepper
- For the brisket:
- 6-7 pound beef brisket
- Mix ingredients in bowl to make rub.
- Pat brisket dry with paper towel.
- Massage rub into brisket.
- Cover with plastic wrap and refrigerate for 2 hours.
- Prepare grill at 225 degrees. Place brisket, fat side up, in center of grill. Use smoking wood as you wish. Cook for 1 hour per pound. After cooking prescribed length, insert a meat thermometer into thickest part of brisket. It should read 185 degrees. Remove meat, let rest for 30 minutes. Carve.
