Dot'S Favorite Potato Salad
- 8 med. potatoes (cooled, peeled, diced)
- 1 stalk celery, diced
- 2 hard boiled eggs, sliced
- 1 c. sugar
- 1/4 tsp. pepper
- 1/2 c. cider vinegar
- 2 eggs, beaten
- 1 onion, minced
- 4 slices bacon, diced
- 1 1/2 tsp. salt
- 1/4 tsp. dry mustard
- 1/2 c. water
- Lightly toss potatoes, celery, hard boiled eggs, and onion together in a bowl.
- Fry bacon in a heavy skillet until pieces are browned.
- Stir a mixture of salt, pepper, dry mustard, and sugar into the vinegar and water.
- Add to the beaten eggs and mix well. Pour egg mixture into the hot bacon and fat and stir until mixture thickens, about 10 minutes.
- Pour over the potato mixture and toss lightly to mix thoroughly.
- Chill 3 - 4 hours or overnight.
