Dot'S Favorite Potato Salad

  1. Lightly toss potatoes, celery, hard boiled eggs, and onion together in a bowl.
  2. Fry bacon in a heavy skillet until pieces are browned.
  3. Stir a mixture of salt, pepper, dry mustard, and sugar into the vinegar and water.
  4. Add to the beaten eggs and mix well. Pour egg mixture into the hot bacon and fat and stir until mixture thickens, about 10 minutes.
  5. Pour over the potato mixture and toss lightly to mix thoroughly.
  6. Chill 3 - 4 hours or overnight.
