Grilled Mustard-Garlic Skirt Steak With Arugula
- 1/2 head reserved roasted garlic
- 1/2 tsp hot sauce
- 3 1/2 tsp Dijon mustard
- Salt and freshly ground pepper
- 1 lb skirt steak
- 2 Tbsp extra-virgin olive oil
- 1 Tbsp balsamic vinegar
- Reserved arugula
- 1. Peel the roasted garlic and then use the side of a knife to mash it into a paste. In a small bowl, stir together the garlic, hot sauce, 3 tsp of the mustard, 3/4 tsp of salt, and 1/2 tsp of pepper. Rinse the steak and pat it dry, and then rub the garlic-mustard mixture all over it.
- 2. Preheat a grill or grill pan to high. When the grill is ready, add the steak and cook it, flipping once, until grill marks appear and the steak is medium rare. This will take 4 to 6 minutes for thinner pieces and 6 to 8 minutes for thicker ones. Let the steak rest 10 minutes.
- 3. Meanwhile, whisk together the oil, vinegar, remaining 1/2 tsp of mustard, and 1/4 tsp each of salt and pepper. When you're ready to eat, toss the arugula with the dressing and slice the steak.
