Zuchini With Tomatoes And Cilantro
- 4 Medium zuchinis sliced
- 2 Medium tomatoes chopped
- 1/2 Medium onion
- 1 bunch of fresh cilantro chopped
- 1 chicken bouillon
- 2 TB margarine
- 2 slices of American cheese(optional)
- 1.Cut the zuchini in 1 inch slices and cook or steam until tender but still crunchy. Drain.
- 2.In the same sauce pan add the butter,the chicken bouillon and the tomatoes.
- 3.On medium heat cook until tomatoes are tender.
- 4.Add the zuchini and taste to see if it needs any salt.
- 5.Add pieces of cheese if desired so it melts.
- 6.Add the fresh cilantro.
- 7.Shake the pan so everything mixes.( Mixing with a spoon may smash the zuchini).
- 8.If it dries up add a little more butter or water to mix all the juices together.
- 9.Serve hot.
