Zuchini With Tomatoes And Cilantro

  1. 1.Cut the zuchini in 1 inch slices and cook or steam until tender but still crunchy. Drain.
  2. 2.In the same sauce pan add the butter,the chicken bouillon and the tomatoes.
  3. 3.On medium heat cook until tomatoes are tender.
  4. 4.Add the zuchini and taste to see if it needs any salt.
  5. 5.Add pieces of cheese if desired so it melts.
  6. 6.Add the fresh cilantro.
  7. 7.Shake the pan so everything mixes.( Mixing with a spoon may smash the zuchini).
  8. 8.If it dries up add a little more butter or water to mix all the juices together.
  9. 9.Serve hot.
