Quinoa

  1. 1. Wash the Quinoa until the water runs clear - this is important as if you do not the quinoa will taste bitter.
  2. 2. Place Quinoa in a pot and add water so that it covers the quinoa by a little less than an inch. Then bring to boil until the quinoa has a vermicular appearance. If it looks like its drying up and needs some more time simply add some more water.
  3. 3. In the meantime finely chop the onions and fry them with some olive oil, but do not colour them. Once soft add the garlic and fry for a minute. Then add the tomato paste.
  4. 4. Season the onion tomato mixture with salt, pepper and oregano.
  5. 5. Once the quinoa is done turn down the heat to low, add the onion mixture to it and stir in thoroughly. Add the cheese and the milk/cream to taste.
  6. 6. Check the seasoning and enjoy it raji!
