Quinoa
- 250 g Quinoa
- Olive Oil
- 1 large Yellow Onion
- 2 cloves garlic
- 1 small can tomato Paste
- 1 Chilli
- 1 teaspoon Oregano
- 150 g Parmesan
- half cup Milk/Cream
- 1. Wash the Quinoa until the water runs clear - this is important as if you do not the quinoa will taste bitter.
- 2. Place Quinoa in a pot and add water so that it covers the quinoa by a little less than an inch. Then bring to boil until the quinoa has a vermicular appearance. If it looks like its drying up and needs some more time simply add some more water.
- 3. In the meantime finely chop the onions and fry them with some olive oil, but do not colour them. Once soft add the garlic and fry for a minute. Then add the tomato paste.
- 4. Season the onion tomato mixture with salt, pepper and oregano.
- 5. Once the quinoa is done turn down the heat to low, add the onion mixture to it and stir in thoroughly. Add the cheese and the milk/cream to taste.
- 6. Check the seasoning and enjoy it raji!
