Summer Tomato And Spicy Sausage Pasta
- 2 Tbsp. canola oil
- 1 med or large cooking onion (chopped or sliced radially)
- 3 spicy Italian Sausages (removed from casing)
- 1 796ml can (27oz?) Diced Tomatoes
- (remove some of the liquid to prevent an overly watery dish)
- 3 large cloves garlic pressed or sliced
- 3 cups dry pasta
- S&P to taste
- Garnish with grated Parmesan reggiano if you like.
- In a medium sized sauce pan, sautee onion in oil on medium heat, until almost translucent and still a bit crunchy.
- Add sausages, and break apart as it cooks (so that it resembles ground beef).
- Once cooked (about 10 minutes), add canned tomatoes and crushed garlic.
- Allow the sauce to simmer for 15-20 minutes to allow flavours to mix.
- While sauce is cooking, cook pasta to preferred consistancy.
- Serve sauce atop the pasta and add a little parmesan reggiano if you like.
