Dessert Cheese Centerpiece
- 2 c. cream style cottage cheese
- 3 oz. cream cheese, softened
- 1/2 c. (2 oz.) Blue cheese, crumbled
- 1 c. whipping cream
- assorted crackers
- apple wedges, sliced
- fresh pears
- Beat together cottage cheese, cream cheese and Blue cheese until they are smooth and creamy.
- Gradually beat in whipping cream, beating until thickened.
- Stand colander in a bowl and line with several thicknesses of cheesecloth.
- Pour in cheese mixture. Tie cheesecloth at top.
- Let drain overnight in refrigerator. Untie cloth and turn ball out onto a plate.
- Remove cloth. Decorate top of cheese with lemon or mint leaves.
- Surround cheese with assorted crackers, apples and pears.
- Brush fruit lightly with lemon juice or ascorbic acid color keeper to keep from turning brown.
- Yields 6 to 8 servings.
