Spinach With Feta And Olives
- 4 packages (10 ounces each) cleaned, fresh spinach
- 1 cup (6 ounces) crumbled feta cheese
- 1/2 cup chopped, canned pitted black olives
- 2 tablespoons extra-virgin olive oil
- Salt and black pepper, to taste
- Preparation Time: Approximately 10 minutes
- Cook Time: Approximately 4 minutes
- Preparation:
- Poke a few holes in the spinach bags and microwave them on high (2 at a time) for 4 minutes, until the spinach is wilted; drain. While the spinach is cooking, toss feta, chopped olives and olive oil in a serving bowl. Add the spinach, and toss to coat. Season with salt and pepper.
