Best Ever Lemon Pie-According To Judy Cole!
- ===Lemon Filling===
- 1 1/4 c. sugar
- 6 Tbl. cornstarch
- 2 cups water
- 1/3 cup lemon juice
- 3 eggs, separated
- 3 Tbls. butter
- 1 1/2 tsp. lemon extract
- 2 tsp. vinegar
- ===Meringue===
- 1 Tbl. cornstarch
- 2Tbl. cold water
- 1/2 cup boiling water
- 3 egg whites
- 6 Tbl. sugar
- 1 tsp vanilla
- pinch salt
- Mix sugar, cornstarch together in top of dbl. boiler. Add 2 cups water.
- Combine egg yolks w/ juice & beat. Add to rest of misture. cook until thick over boiling water for 25 mins
- Add lemon extract & vinegar & stir thoroughly. Pour into pie shell & let cool. cover w/ meringue & brown in oven.
- ====Meringue===
- Blend cornstarch & cold water in saucepan. Add boiling water & cook, stirring until clear & thickened.
- Let stand completely until cold.
- Beat egg white on high til foamy. Gradually add sugar and beat until stiff, but not dry. Turn mixer to low speed and add salt and vanilla. Gradually beat in cold cornstarch mix, turn mixer to high speed & beat well.
- Bake at 350 for 10 mins til brown
