Three Bean Chili
- 1 T Olive Oil
- 1 Cup chopped onion
- 3 Cloves minced garlic
- 2 Pounds ground Turkey Breast
- 1 Pound ground Leanest Ground Beef
- 1/4 cup Chili Powder
- 2 T ground Cumin
- 1 T dried oregano
- 1 1/2 tsp Ground Coriander
- 1/4 tsp cayenne pepper
- Tapatio sauce or other hot pepper sauce to taste.
- Grated rind of 1 lime and juice of 1 lime
- 1 can chicken broth.
- 1 Can (28 ounces) crushed tomatoes, undrained
- 1 can each red kidney beans, black beans, and white beans, rinsed and drained
- ground pepper to taste
- toppings of choice (Limes, cheddar cheese, fritos, avocado, cilantro, sour cream)
- Heat olive oil in large soup pot or dutch oven. Add and saute onions. Once translucent and soft, add garlic and cook for 1 minute. Add meat and cook stirring and breaking up lumps until the meat is no longer pink.
- Add chili powder and other seasoning, cook and stir for 2 minutes. Add chicken broth and tomatoes with their juice and bring to a boil. Reduce and cook stirring occasionally for 1 hour. Stir in beans, heat thru and season again if necessary with salt/pepper.
- Serve with toppings.
