Spit Roast Chicken With Black Pepper
- chicken 1 no
- black pepper 10gm
- cumin seeds broiled and grounded 10gm
- salt and chilly pwd to taste
- oil /clarified butter 50gm
- lemon 2 no.
- rum 50ml
- basil fresh choped 10gm
- carrots 50gm
- beans 50gm
- brocolli 50gm
- peas shelled 50gm
- turned potatoes 50gm
- clean and wash chicken , make gashes and rubbed well with salt,black pepper crushed,cumin pwd,chilli crushed,lemon juice,oil,chopped basil inside the chicken cavity and rum.leave it for 30 minutes.roast chicken over a low heat till well done.add oil/butter while turning chicken on fire before serving add the remaining rum, serve hot whole or pieces with grilled or buttred vegetables and with lemon wedges.its goes well with white wine and with sprits.
- NOTE: chicken should not be dried while cooking it should be juicy to get a nice flavour of black pepper and cumin seeds.
