Cheese And Beef Upside-Down Cornbread
- 2 Tbsp. butter
- 1 1/2 lb. ground beef
- 1 c. chopped onion
- 1 Tbsp. flour
- 1 (6 oz.) can tomato paste
- 1 tsp. salt
- 1 tsp. chili powder
- 1/8 tsp. pepper
- 1 c. (4 oz.) cubed Cheddar cheese
- 1/2 c. sliced pitted ripe olives
- 1 (18 oz.) pkg. corn muffin mix
- In a large skillet, melt butter.
- Add beef and onion; cook until beef is lightly browned.
- Stir in flour.
- Add tomato paste, salt, chili powder and pepper.
- Remove from heat.
- Add cheese and olives.
- Spread evenly over bottom of a 9 x 12-inch baking pan. Prepare muffin mix according to package directions.
- Spread over beef mixture.
- Bake in a preheated 400u0b0 oven for 30 to 40 minutes. Let stand 5 minutes.
- Loosen around edges and invert onto a serving platter.
- Yield:
- 8 servings.
