Skinny Salsa Chicken
- 4 - 4 oz boneless, skinless chicken breasts
- 4 tsp low-sodium taco seasoning mix
- 1 cup salsa
- 1 cup reduced-fat shredded Mexican cheese blend
- 1/4 cup fresh cilantro (optional)
- 2 Tbsp fresh lime juice (optional)
- 2 Tbsp reduced-fat sour cream (optional)
- Pepper to taste (optional)

- 1. Preheat oven to 375 degrees.
- 2. Place chicken breasts in a lightly greased 9x13 inch baking dish. Sprinkle taco seasoning on both sides of chicken breasts. Top each chicken breast with 1/4 cup of salsa.
- 3. Bake at 375 degrees for 25 to 35 minutes, or until chicken is tender and its juices run clear.
- 4. Remove chicken from the oven and sprinkle 1/4 cup of cheese on each. Return to oven and continue baking for an additional 3 to 5 minutes, or until cheese is melted and bubbly.
- 5. Top with cilantro, lime juice and sour cream if desired.
