Monster Health Boca Bean Salad
- 1/2 onion
- 2 cloves garlic
- 1/2 cup carrots
- 1/2 cup celery
- handful chopped parsley
- 2 green onions
- 2 Tblsp Tomato Paste
- 2 boca burgers cooked in microwave (200 calories total)
- 1/2 cup beans of choice
- 1 tsp dijon mustard
- 4 tsp parmesan cheese
- 1/4 cup nonfat plain yogurt
- salt and pepper
- 1/2 lemon
- 1 tsp cinnamon
- tobasco
- Bed of baby Spinach
- Chop onion, garlic, carrots, celery, parsley, green onions, and place in bowl. Cook 2 boca burgers in microwave, chop, and place in bowl. add 1/2 cup of beans into bowl. squeeze lemon in, add tomato paste, add parmesan cheese, cinnamon, tobasco, salt, pepper. mix, adjust seasoning to taste.
- I like to serve my salad atop a nice bed of baby spinach, with a huge dollop of nonfat plain yogurt, and a sprinkle of green onions.
