Spicy Salmon

  1. Start:
  2. Preheat over to 400 degrees. Line a baking sheet with foil. Mix onion, garlic, peppers, cilantry and tomatoes together in a medium bowl.
  3. Prepare:
  4. Cut four 12x12 inch pieces of foil and place 1/2 cup spinach in the center of each. Top spinach with one salmon fillet, then 1/4 of the tomatoe mixture. Sprinke with salt and pepper. Bring the two opppositesides of foil together and fold over to seal. Fold remaining tow sides to seal.
  5. Cook:
  6. Place packets seam side up on baking sheet; bake 15-20 minutes. For rare salmon, cook 12-15 minutes. Open packets carefully, allowing steam to escape; serve garnished with slime slices if desired.
