Key Lime Cupcakes
- 1 cup all purpose flour
- 3/4 cup self-rising flour
- 1 stick butter room temperature
- 1.25 cups sugar
- 2 large eggs
- 2.5 tablespoons lime juice
- 1 tablespoon lime zest
- 1/4 teaspoon neon green food coloring
- 3/4 cup buttermilk
- Frosting:
- 1 eight ounce package cream cheese, room temperature
- 1.5 cups powdered sugar
- 1 stick butter
- 1 tablespoon lime zest
- 1/2 teaspoon vanilla extract
- preheat oven to 350
- 1. whisk two flours together
- 2. beat butter in a large bowl until smooth, add sugar to blend
- 3. beat in eggs 1 at a time, then add next three ingredients (may look curdled)
- 4. alternate flour and buttermilk until combined
- 5. bake 20-25 minutes
- Frosting: blend then spread over cupcakes
