Tom Kah Soup
- Ingredients:
- 16 oz chicken broth
- 4 lime leaves
- 2 inch piece of lemon grass
- 1 inch piece Galangal (The "kah in the recipe- related to ginger) sliced very thin.
- 4 tablespoons of fish sauce
- 2 tablespoons of lime juice
- 4 oz chicken breast, cut into bite sized pieces
- 5 oz. coconut milk
- pinch of red chili powder
- cilantro leaves for garnish
- Directions:
- -Heat the chicken broth.
- -Add all of the ingredients except for the chicken, coconut milk, and cilantro, and bring to a boil.
- -Add the chicken and coconut milk.
- -Boil for 2 minutes, until the chicken is cooked, then simmer for two minutes.
- -Pour into bowls, garnish with cilantro, and serve.
