Cold Sesame Noodles
- In a 2qt. bowl mix:
- 1/2 cup sesame paste
- 1/4 cup sesame oil
- 1/2 cup honey
- 2 cloves garlic, chopped fine
- 1/4 cup peanut or vegetable oil (such as canola or safflower)- use high quality oils
- (I prefer the brand Spectrum)
- dash ginger powder
- 3-4 chopped scallions
- 3 Tbsp Chinese hot Chili oil
- 1/4 cup Tamari, low salt
- dash vinegar (rice vinegar is best, or cider)
- 1/2 cup (approx) hot water to desired consistency (heat in microwave)
- Boil approx. 1.5 lb. Ramen, Soba or Buckwheat Noodles until almost done (leave a bit firm).
- Combine all (except for noodles) until consistency of thick salad dressing. Pour over noodles and toss. Chill in refrigerator. The longer it sits the better. Serve at room temperature or cooler (consider serving with slivers melon or cucumbers).
