Eclairs
- Eclairs:
- 1 cup water
- 1/2 cup margarine
- 1 cup unsifted flour
- 4 eggs
- Heat water and butter to a "rolling" boil. Stir in the flour all at once, over low heat. Beat until a ball is formed. Take off the heat and cool, beating in eggs one at a time. Spoon onto a cookie sheet. Bake at 400 degrees for 35 minutes.
- Filling:
- 1 cup milk
- 2 cups cream
- 2 packages of instant pudding
- 1 teaspoon vanilla
- Mix together pudding, milk, cream and vanilla, whip on high with a kitchen aid until stiff.
- Chocolate Glaze:
- 1 tablespoon of cocoa
- 1 tablespoon of butter
- 1 tablespoon of milk
- 1/2 cup powdered sugar
- 1/2 teaspoon vanilla
- Melt the cocoa and butter together. Take of heat and stir in the other ingredients until smooth. Drizzle over the eclair.
