White Chocolate Pumpkin Squares
- Crust:
- 1/4 cup quick oats
- 1/2 cup all-purpose flour
- 1/4 cup brown sugar, packed
- 4 Tbsp. butter or margarine
- Filling:
- 1 cup pumpkin puree
- 3/4 cup half and half
- 2 Tbsp. molasses
- 2 Tbsp. brown sugar
- 1/4 tsp. cinnamon
- 1/4 tsp. allspice
- Topping:
- 1/4 cup packed brown sugar
- 1/2 cup chopped pecans
- 2 Tbsp. all-purpose flour
- 2 Tbsp. butter or margarine
- white chocolate, for melting
- candied ginger, finely chopped
- For the crust, combine the oats, flour and brown sugar. Cut in butter to form coarse crumbs. Press into a buttered 8 inch square glass baking dish. Bake at 375 F for 10 minutes til golden.
- Meanwhile, beat together all filling ingredients til well mixed. Pour into baked crust. Bake at 350F for 30 minutes or until filling is set.
- Combine topping ingredients til crumbly. Sprinkle over top. Bake 10 minutesd longer til golden brown.
- Cool completely. Melt white chocolate and drizzle over top. Sprinkle with candied ginger and cut into squares.
