Poached Chicken & Udon Noodle Salad

  1. Place the chicken in a saucepan and cover with cold water. Bring to the boil and simmer over medium heat for 10 mins. Set aside to cool.
  2. Cook the soba noodles, rinse in cold water and drain.
  3. Place noodles in a bowl with the carrot, capsicum, chilli and spring onion.
  4. Shred the cooled chicken and add to the bowl.
  5. Mix the vinegar, sesame oil, soy sauce and sugar with 2 tablespoons of cold water.
  6. Add to the noodles and combine well before serving.
