Poached Chicken & Udon Noodle Salad
- 4 Chicken Breasts (about 175g each)
- 180 g Soba Noodles
- 1 Carrot, cut into matchsticks
- 1 red capsicum, thinly sliced
- 1 long red chilli, seeds removed (or leave if you prefer the heat)
- 1 bunch spring onions, sliced thinly on an angle
- 2 tbs rice vinegar
- 1 tsp sesame oil
- 1 tbs dark soy sauce
- 1 tsp caster sugar
- Place the chicken in a saucepan and cover with cold water. Bring to the boil and simmer over medium heat for 10 mins. Set aside to cool.
- Cook the soba noodles, rinse in cold water and drain.
- Place noodles in a bowl with the carrot, capsicum, chilli and spring onion.
- Shred the cooled chicken and add to the bowl.
- Mix the vinegar, sesame oil, soy sauce and sugar with 2 tablespoons of cold water.
- Add to the noodles and combine well before serving.
