Easy Au Gratin Potatoes
- 3 lb potatoes
- 1 T each: Butter and ev olive oil
- 1 onion, chopped
- 6 garlic cloves, minced
- 1/2 jar alfredo sauce
- 1 1/2 cup grated cheddar cheese
- 1 tsp dried thyme
- salt and pepper to taste
- parmesan cheese (for topping)
- bell pepper, chopped (optional
- 1/2 cup half and half
- saute onion and garlic in butter/evoo. Add thyme til fragrant. Then add alfredo sauce and set aside. Butter baking dish, layer potatoes, cover with alfredo/onion mixture. Layer with grated cheese, and salt and pepper.
- Repeat with top layer. Sprinkle on parmesan cheese, and cover with foil. Pour half and half over mixture. Bake at 350 for one hour. (keep testing potatoes until well cooked.)
- ( I add the bell pepper to make breakfast potatoes. Then I cut them into 3" squares when cool, and freeze. I take them out the night before to thaw, chop the mixture up in a microwaveable Tupper bowl, and add sliced green onions and chopped tomatoes, and then reheat. Yum, Yum!)
