San'S Five Bean Chili
- 2 lb. ground beef or turkey
- 1 lb. ground pork
- 1 large onion, chopped
- 2 to 3 Tbsp. minced garlic
- 1 to 2 Tbsp. olive oil
- 1 tsp. oregano
- 1 to 2 tsp. salt
- 1 tsp. cumin
- 1 tsp. paprika
- 2 to 3 tsp. cayenne pepper or to taste
- 4 to 5 minced jalapeno peppers (optional)
- 1 (28 oz.) can kitchen ready tomatoes
- 16 oz. can dark red kidney beans
- 16 oz. can light red kidney beans
- 16 oz. can pinto or baked beans
- 16 oz. can black-eyed peas
- 16 oz. can garbanzo beans
- 12 oz. beer
- 4 Tbsp. chili powder or to taste
- 1 to 2 tsp. black pepper
- Saute onion and garlic in olive oil until opaque.
- Add meats and brown thoroughly.
- Drain fat.
- Add tomatoes, beer and beans to meat and bring to a simmer.
- Simmer uncovered for 5 to 7 minutes. Add remaining ingredients.
- Cover and simmer for 30 minutes. Taste after 30 minutes, adjusting seasonings to taste.
- Simmer for 15 to 20 more minutes.
- Serve piping hot.
- Garnish with grated Monterey Jack cheese, chopped onions or jalapenos.
- Goes great with corn bread!
