Sevai + Sabzi (Rice Noodles And Vegetables)
- 8 ounces rice noodles
- 2-1/2 tablespoons oil
- 2 teaspoon black mustard seeds
- 1 medium onion, minced
- 2 tablespoons urad dal (white split lentils)
- 1 tablespoon ginger, minced
- 1 green chili, minced
- 1/2 teaspoon turmeric
- pinch of fenugreek
- 1-1/2 teaspoon salt
- 1 cup vegetables (such as peas, green beans, or broccoli)
- 1/2 cup shredded coconut
- minced cilantro for garnish
- Bring 4 quarts of water to a boil. Add noodles, remove from heat, and drain. Rinse very well with cold water and set aside.
- In a frying pan, heat oil. Add the mustard seeds and cover. After 30 seconds, add onions and brown over high heat, stirring constantly. Add the lentils and ginger, and fry an additional minute. Add chilies, fenugreek, turmeric, and salt, and stir-fry 1 minute longer. Add vegetables and fry 2-3 minutes or until tender (cooking time will vary, depending on the vegetables used).
- Add noodles and coconut. Stir gently, and toss to coat. Cook another 1-2 minutes. Serve immediately and garnish with cilantro.
