Ceviche
- 300 gm mackerel fillet(s) cubed (or any other white meat fish)
- 2 cup tomato(es) chopped
- 1 cup onion(s) chopped
- 1/2 cup ketchup
- 20 gm olive(s)
- 1/8 cup olive oil
- 1 tsp ground oregano
- 1/2 tsp ground black pepper
- 1/4 tsp table salt
- 4 cups fresh lime juice
- tabasco sauce to taste
- 1/2 cup orange juice (fresh sqeezed but without the pulp)
- 1/2 cup Tomato Juice
- 1 cup cilantro chopped
- Place the fish in a bowl, cover with lime juice and allow to "cook" in the fridge overnight.
- Drain and throw out lime juice.
- Mix all other ingredients adding the fish at the end.
- Allow to sit for a few hours. Serve chilled.
