Elli'S Stuffing For Turkey
- 1/2 kgr minced beef meat
- 1 onion, chopped or minced
- 2 tbsp butter
- oil
- 1/4 cup Cognac
- 3/4 cup red wine
- 1 vegetable bullion cube
- juice of 1 orange
- juice of 2 tangerines
- 1/2 bag Sunkist prunes
- 1 large handful blond sultana raisins
- 1 large handful black currants/raisins
- 1 wee bag pine nuts
- 1 cup roughly chopped chestnuts
- 1 tsp sugar
- salt and pepper to taste
- heat oil and butter, then onion till softened. Add meat and brown. Lower heat. Add cognac, red wine, salt/pepper, bullion. Lower heat some more. Add juices from fruit, simmer and then add toasted pine nuts, raisins, chestnuts and sugar.
- Add water or wine if mixture dries up. You want it quite moist.
