Sauted Veggies With Polenta And Cheese

  1. Slice the polenta (available already prepared in tubes) into two 1/2 inch slices.
  2. Saute in the olive oil for approx. 2 mins per side or until the polenta is slightly browned and heated thru.
  3. Remove from the pan and keep warm.
  4. Slice the veggies into uniform pieces and saute in the same pan as the polenta for 2-3 minutes. Add salt and pepper to taste.
  5. Place the polenta on a dinner plate and top with sauted veggies.
  6. Sprinkle with grated parmesan and enjoy.
