Sauted Veggies With Polenta And Cheese
- Prepared Polenta
- 2 tbsp Olive Oil (best quality available)
- 1/2 red pepper, sliced
- 1/4 large sweet onion sliced
- 1 small zuchini julienned
- 1/2 cup fresh grated parmesan cheese
- salt and fresh ground pepper to taste
- Slice the polenta (available already prepared in tubes) into two 1/2 inch slices.
- Saute in the olive oil for approx. 2 mins per side or until the polenta is slightly browned and heated thru.
- Remove from the pan and keep warm.
- Slice the veggies into uniform pieces and saute in the same pan as the polenta for 2-3 minutes. Add salt and pepper to taste.
- Place the polenta on a dinner plate and top with sauted veggies.
- Sprinkle with grated parmesan and enjoy.
