Chickpea Flatbread
- 1 cup chickpea flour
- 1 cup water
- 3.5 Tbs olive oil
- 3/4 teaspoon kosher salt
- 2 tsp chopped rosemary
- ground pepper
- Combine flour, water, 1.5 Tbs oil, salt, rosemary, stirring until smooth. Cover and let rest for at least 2 hours, or refrigerate overnight.
- Place oven rack 4-6" from broiler. Place cast iron skillet on rack, preheat to 500 degrees.
- Remove hot skillet, pour in remaining oil and return to heat up. Pull out just long enough to pour the batter, bake for 5 minutes the bread will look set.
- Turn on broiler for 3-4 minutes until slightly charred.
- Sprinkle with pepper to taste and slide bread onto cutting board.
- Per piece: 60 calories, 2 g protein, 4 gr carbs, 5 g fat, 1 g saturated fat, 0 mg cholosterol, 125 mg sodium.
