Cheesecake
- 1/3 c. melted margarine
- 1 1/4 c. graham cracker crumbs
- 1/4 c. sugar
- 2 (8 oz.) pkg. regular cream cheese, softened to room temperature
- 1 (14 oz.) can sweetened condensed milk
- 3 eggs
- 1/4 c. lemon juice
- grated rind of lemon
- Preheat oven to 300u0b0.
- Combine margarine, crumbs and sugar. Press firmly on bottom of 9-inch spring-form pan.
- In large mixer bowl, beat cream cheese until fluffy.
- Gradually beat in sweetened condensed milk until smooth.
- Add eggs one at a time, beating approximately 2 minutes between each egg.
- Add lemon juice and grated rind.
- Mix well.
- Pour into prepared pan.
- Bake 50 to 55 minutes or until cake springs back when lightly touched.
- Cool. Chill.
- Remove side of pan.
- Top with fresh fruit or serve plain.
